Before we taste anything, we ask:
Where is this from?
How long has this recipe existed?
Who makes it and how?
Does it connect to Indian heritage in a meaningful way?
If the story isn’t strong, the product isn’t for us.
Step 2: The Taste Test
Taste is non-negotiable.
We look for:
Clean flavour
No bitterness or aftertaste
Proper roasting, frying or reduction
Balanced sweetness or spice
A product must feel honest, not engineered.
Step 3: Quality of Ingredients
We inspect:
Type of oil used
Quality of grains or spices
Purity of ghee
Freshness and shelf life
Good ingredients create good memories.
Bad ones break trust.
Step 4: Consistency
A product should taste the same every time.
This requires discipline from the maker — not luck.
If the flavour changes often, we don’t continue.
